Chicken and Mushroom Loaf (Oamc)

  1. Heat the oil in a frying pan.
  2. Add the onion and cook over a moderate heat until soft but not brown.
  3. Add the carrot and stir-fry for 2 minutes.
  4. Place in a large mixing bowl.
  5. Add the remaining ingredients and mix thoroughly.
  6. Press the mixture into a lightly oiled 2.5 pint loaf tin or dish.
  7. Cover with lightly oiled greaseproof paper and bake in the centre of a preheated oven , 375F for 45 minutes.
  8. Carefully pour away any liquid that has appeared during cooking.
  9. Invert the loaf onto a serving dish.
  10. Serve in slices, hot with mixed vegetables.
