Soybean & Fennel Salad
- 30 ounces soybeans, rinsed (2 15 ounce cans)
- 1 12 cups fennel bulbs, sliced
- 12 cherry tomatoes, quartered
- 4 tablespoons onions, finely minced
- 2 garlic cloves, pressed
- 4 tablespoons fresh lemon juice
- 3 tablespoons fresh parsley, chopped
- 3 tablespoons walnuts
- olive oil, to taste
- salt, to taste
- pepper, to taste
- Mince onion and press garlic and let sit for 5 minutes to bring out their health-promoting properties.
- Mix all ingredients together.
- Chill until serving time.
