Two Bean Salad
- 1/2 cup finely chopped red onion
- 1/4 cup fresh cilantro leaves
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon red wine vinegar
- 2 serrano chiles, stemmed, seeded and finely chopped
- 2 cloves garlic, minced
- One 15.5-ounce can cannellini beans, rinsed and drained
- One 15.5-ounce can red kidney beans, rinsed and drained
- Salt and freshly ground pepper
- In a medium glass bowl, whisk together the onions, cilantro, olive oil, lime juice, vinegar, chiles and garlic.
- Add the beans and stir to combine.
- Season with salt and pepper.
- Serve at room temperature.
