Becky Sue's BBQ Pork & Pistachio Bacon Bullets
- 1-1/2 gals. Cooked boneless pork shoulder, pulled, cooled Safeway Buy 1 Get 3 Free thru 02/09
- 2 cups pistachios, shelled
- 1-1/3 Tbsp. black pepper
- 2 tsp. crushed red pepper
- 64 slices OSCAR MAYER Bacon (22-26 Slice Count) Rite Aid 2 For $7.00 thru 02/06
- 2 cups Becky Sue's BBQ Sauce
- Combine all ingredients except bacon and Becky Sue's BBQ Sauce; divide into 16 portions (or into 4 portions for trial recipe), using about 8.5-oz.
- meat mixture for each portion.
- Roll each portion into 6-inch log.
- Wrap 4 bacon slices, evenly spaced, around each log; secure with skewers.
- Grill until bacon is crisp and meat logs are heated through and evenly browned, turning occasionally.
- Glaze each roll with 2 Tbsp.
- Becky Sue's BBQ Sauce.
- Remove from grill.
- Discard skewers.
- Cut each log into 4 pieces to serve.
