Chicken Spinach Salad With Cilantro Recipe
- Cilantro Dressing (recipe follows)
- 1 (15 ounce.) can garbonza beans, liquid removed
- 1 sm. red onion, finely sliced and separated into rings
- 1 (2 1/4 ounce.) can sliced ripe olives, liquid removed
- 1 bunch spinach (about 3/4 lb.)
- 3-4 c. chicken, cooked, cut in 1/2 inch wide strips
- Prepare Cilantro Dressing and add in garbonza beans, onions and olives.
- Mix gently till blended.
- Cover and chill at least 4 hrs or possibly till next day.
- Wash spinach leaves, pat dry and chill at least 30 min.
- Lightly mix chicken into garbonzo mix.
- Arrange spinach in rimmed platter or possibly bowl and top with chicken salad.
