Chicken Stew'n Dumplings Recipe
- 2 to 3 lbs. chicken, cut up
- 2 tbsp. butter
- 1/2 c. water
- 1 c. sliced onion
- 1/4 teaspoon poultry seasoning
- 1 can Cream of Chicken soup
- 1 (10 ounce.) pkg. frzn mixed vegetables
- 1 c. packaged biscuit mix
- 1/3 c. lowfat milk
- Sprinkle chicken with 1/2 tsp.
- salt, and dash of pepper.
- Brown in butter in large heavy pan.
- Add in water, onion, poultry seasoning.
- Cover and simmer 30 min.
- Stir now and then.
- Combine biscuit mix and lowfat milk; spoon dumplings onto stew.
- Cook uncovered 10 min.
- Cover and cook 10 min longer.
- Makes 4 servings.
