Madeira Sauce
- 1 small onion, finely chopped
- 4 tablespoons madeira wine
- 3 cups beef stock
- 12 ounce butter
- salt and black pepper
- Saute the onions in a hot pan until they are well browned then add the Madeira.
- Reduce the liquid by half, add the stock and then reduce by half again.
- Season with salt and pepper.
- Pass through a sieve, then add the butter.
- Serve warm.
