Peanut Chicken Patties

  1. Combine chicken, peanut butter, coriander, shallots and chilli until mixed thoroughly.
  2. Form into 12 patties and roll gently in some extra plain flour.
  3. Cook in a non-stick frypan over moderate heat for 8 minutes, until golden brown or until cooked through.
  4. Serve with a fresh green salad.
