Peanut Chicken Patties
- 500g lean chicken mince Whole Foods 1 lb For $3.99 thru 02/09
- 1/3 cup KRAFT* Light Smooth Peanut Spread
- 1/2 cup coriander, chopped
- 1/4 cup finely chopped shallots
- 1/2 teaspoon chopped red chilli, optional
- plain flour for rolling
- Combine chicken, peanut butter, coriander, shallots and chilli until mixed thoroughly.
- Form into 12 patties and roll gently in some extra plain flour.
- Cook in a non-stick frypan over moderate heat for 8 minutes, until golden brown or until cooked through.
- Serve with a fresh green salad.
