Hot Cross Buns
- 34 cup warm water
- 14-12 cup warm milk
- 14 cup sugar
- 1 egg
- 1 tablespoon oil
- 34 teaspoon salt
- 2 12 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon clove
- 14 teaspoon nutmeg
- 1 cup raisins
- 14 cup candied peel (optional)
- 1 tablespoon yeast
- 14 cup flour
- 3 -4 tablespoons water
- 13 cup water
- 2 tablespoons sugar
- Place all ingredients into the bowl of a stand mixer.
- Using the dough hook, mix for 4-5 minutes.
- Cover dough and let rise in a warm place for 45 minutes.
- Punch down dough and shape into 12 buns.
- Place buns in a greased 9x12 pan.
- Let rise another 45 minutes to an hour.
- While the buns are rising, make the cross mixture.
- Combine flour and water until it resembles a paste.
- Pour into a ziplock bag with one corner cut out and pipe crosses onto the buns.
- Bake buns at 375 degrees for 20-25 minutes.
- While the buns are baking, prepare the glaze by combining the sugar and water in a pot.
- Bring to a boil and simmer for a few minutes, until the glaze has reduced slightly.
- When the buns come out of the oven, baste tops with glaze (using a pastry brush).
- Let cool before eating.
