Hot Cross Buns

  1. Place all ingredients into the bowl of a stand mixer.
  2. Using the dough hook, mix for 4-5 minutes.
  3. Cover dough and let rise in a warm place for 45 minutes.
  4. Punch down dough and shape into 12 buns.
  5. Place buns in a greased 9x12 pan.
  6. Let rise another 45 minutes to an hour.
  7. While the buns are rising, make the cross mixture.
  8. Combine flour and water until it resembles a paste.
  9. Pour into a ziplock bag with one corner cut out and pipe crosses onto the buns.
  10. Bake buns at 375 degrees for 20-25 minutes.
  11. While the buns are baking, prepare the glaze by combining the sugar and water in a pot.
  12. Bring to a boil and simmer for a few minutes, until the glaze has reduced slightly.
  13. When the buns come out of the oven, baste tops with glaze (using a pastry brush).
  14. Let cool before eating.
