Baked Orange-Chipotle Chicken

  1. Preheat oven to 350F.
  2. Grate orange to yield 2 tsp.
  3. grated orange zest; set orange aside.
  4. Mix mayo, chipotle pepper, garlic and 1 tsp.
  5. of the orange zest until well blended.
  6. Rinse chicken and pat dry with paper towel.
  7. Place chicken on foil-lined baking pan.
  8. Using your fingertips, carefully separate the skin from the meat.
  9. Carefully spread mayo mixture under chicken skin of each chicken piece; press skin to secure.
  10. Squeeze orange to yield 1/4 cup juice.
  11. Add dressing and cumin; beat with wire whisk until well blended.
  12. Drizzle 1/4 cup of the juice mixture over chicken.
  13. Sprinkle chicken with remaining 1 tsp.
  14. orange peel.
  15. Bake 30 min.
  16. Pour remaining juice mixture over chicken.
  17. Bake an additional 10 to 15 min.
  18. or until chicken reaches an internal temperature of 180F.
  19. Meanwhile, prepare stuffing as directed on package.
  20. Serve chicken with stuffing.
