Baked Orange-Chipotle Chicken
- 1 medium navel orange Safeway 1 lb For $0.79 thru 02/09
- 1/4 cup KRAFT Real Mayo Mayonnaise
- 1 chipotle chile pepper in adobo sauce, finely chopped, mashed
- 2 cloves garlic, minced
- 1 whole roasting chicken (3-1/2 lb.), cut into pieces
- 1/4 cup KRAFT Zesty Italian Dressing
- 1/2 tsp. ground cumin
- 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
- Preheat oven to 350F.
- Grate orange to yield 2 tsp.
- grated orange zest; set orange aside.
- Mix mayo, chipotle pepper, garlic and 1 tsp.
- of the orange zest until well blended.
- Rinse chicken and pat dry with paper towel.
- Place chicken on foil-lined baking pan.
- Using your fingertips, carefully separate the skin from the meat.
- Carefully spread mayo mixture under chicken skin of each chicken piece; press skin to secure.
- Squeeze orange to yield 1/4 cup juice.
- Add dressing and cumin; beat with wire whisk until well blended.
- Drizzle 1/4 cup of the juice mixture over chicken.
- Sprinkle chicken with remaining 1 tsp.

- Bake 30 min.
- Pour remaining juice mixture over chicken.
- Bake an additional 10 to 15 min.
- or until chicken reaches an internal temperature of 180F.
- Meanwhile, prepare stuffing as directed on package.
- Serve chicken with stuffing.
