Gulf Coast Casserole
- 2 pints oysters, drained
- 12 cup butter or 12 cup margarine, divided
- 1 lb mushroom, sliced
- 2 (12 ounce) packagespeeled frozen shrimp, thawed in boiling water
- 1 cup chopped cooked chicken
- 1 (10 3/4 ounce) can mushroom soup
- 1 tablespoon grated onion
- 12-1 teaspoon pepper
- 1 teaspoon salt
- 1 tablespoon chopped parsley
- 2 tablespoons sherry wine
- cayenne pepper
- Saute oysters in 2 tablespoons butter/margarine until edges curl, then drain.
- Saute mushrooms in other 4 tablespoons butter/margarine.
- & drain.
- Combine all ingredients.
- Bake at 350F for 30 minutes.
- Serve over wild rice.
