Good for You Breakfast Bars

  1. For the filling:
  2. Steam the apple slices until soft.
  3. Plump raisins in the apple steaming water, then drain.
  4. Remove the apple peels (if desired) and mash.
  5. Add raisins and jam to the apple mash.
  6. For the base:
  7. Preheat oven to 350F.
  8. In a small bowl, combine the first four ingredients and mix till smooth.
  9. In a larger bowl, combine the remaining ingredients and mix thoroughly.
  10. Add the moist ingredients to the dry ingredients, and mix until just blended.
  11. If too dry, add more soy milk.
  12. Spread half of the mixture in a 4x9 cake pan or casserole.
  13. Spread the filling in the middle, then spread the remaining mixture over the top.
  14. Bake for 30-40 minutes, or until the top is brown.
  15. Cool and slice into bars.
