  1. Cook the bacon.
  2. in a medium skillet until it is crisp.
  3. Remove with a slotted spoon; reserve 2 T bacon grease in the skillet.
  4. Drain.

  6. Put the chopped plantain in the skillet with the grease; cook over medium heat for 3 minutes or until golden brown, stirring often.
  7. Add peas; cook 2 minutes.
  8. Remove skillet from heat and mix in bacon.
  9. Smear the tortillas with beans; put them on a baking sheet lined with aluminum foil.
  10. Top with cheese and plantain mixture.
  11. Use the back of a spoon to make a hole in the center of the mixture on each tortilla; Cover with aluminum foil.
  12. Place in the refrigerator for 24 hours.
  13. Heat oven to 350F.
  14. Break an egg into each one of the holes.
  15. Bake for 20 to 25 minutes or until the whites are completely firm and the yolks begin to thicken, but are not all the way firm.
  16. Note : To serve these the same day, prepare the recipe as indicated; reduce baking time for 15 to 18 minutes or until whites are firm and yolks begin to thicken.
