Potato Frittata

  1. In a 10-inch or 12-inch skillet, saute potatoes, onion and green pepper in oil until potatoes are tender.
  2. Add the meat and heat through.
  3. In a bowl, beat eggs, paprika, salt and pepper.
  4. Pour over potato mixture.
  5. Do not stir.
  6. Cover and cook over medium-low heat for 10 to 15 mintues or until eggs are nearly set.
  7. Broil 6 inches from the heat for 2 minutes or until top is lightly browned.
  8. Arrange cheese slices on top.
  9. Let stand for 5 minutes before serving.
