Beet, Red Onion And Horseradish Relish Recipe

  1. Preheat oven to 350 F. Wrap beets in double thickness of foil.
  2. Roast beets on oven rack till tender, about 1 hour 45 min.
  3. Unwrap beets and cold.
  4. Whisk oil, vinegar, salt and pepper in medium bowl till blended.
  5. Fold in onion and horseradish.
  6. Peel beets; cut into 1/3 inch dice.
  7. Add in to onion mix.
  8. Cover; refrigerate1 to 4 days.
