Beet, Red Onion And Horseradish Relish Recipe
- Start preparing this at least a day ahead.
- 3 x (2 1/2 inch-diameter) beets, trimmed
- 1/2 c. extra virgin olive oil
- 3 Tbsp. balsamic vinegar
- 1 tsp coarse salt
- 1/2 tsp pepper
- 1 1/2 c. minced red onion
- 1/3 c. prepared white cream-style horseradish
- Preheat oven to 350 F. Wrap beets in double thickness of foil.
- Roast beets on oven rack till tender, about 1 hour 45 min.
- Unwrap beets and cold.
- Whisk oil, vinegar, salt and pepper in medium bowl till blended.
- Fold in onion and horseradish.
- Peel beets; cut into 1/3 inch dice.
- Add in to onion mix.
- Cover; refrigerate1 to 4 days.
