Vanilla-Coconut Shrimp
- 2 cups honey-flavored multi-grain cereal flakes with vanilla-flavored clusters
- 2/3 cup BAKER'S ANGEL FLAKE Coconut
- 4 egg whites
- 2 Tbsp. water
- 1-1/2 lb. peeled and deveined uncooked medium shrimp Safeway 1 lb For $8.99 thru 02/09
- 1/4 cup orange marmalade
- 1 Tbsp. KRAFT Horseradish Sauce
- 1/4 tsp. lime juice Safeway 3 ct For $1.00 thru 02/09
- Preheat oven to 400F.
- Combine cereal and coconut in pie plate; set aside.
- Beat egg and water in small bowl with wire whisk until foamy.
- Dip shrimp, one at a time, in egg mixture, then in cereal mixture, turning to evenly coat both sides of each shrimp.
- Press coating mixture firmly onto shrimp to secure.
- Place in single layer on lightly greased baking sheet.
- Bake 12 to 14 min.
- or until shrimp are cooked through.
- Meanwhile, mix marmalade, horseradish sauce and lime juice; cover.
- Refrigerate until ready to serve with the shrimp.
