Fruitcake Bars
- 1 cup unsalted butter, at room temperature
- 1 cup packed dark brown sugar
- 12 cup granulated sugar
- 2 tablespoons corn syrup
- 1 teaspoon vanilla extract
- 1 large egg
- 2 34 cups all-purpose flour
- 12 teaspoon kosher salt
- 1 14 teaspoons baking soda
- 1 cup dried cranberries
- 1 cup candied pecans
- 1 tablespoon rum
- Heat oven to 375 degrees.
- With an electric mixer on medium high, beat the butter, brown and granulated sugars, corn syrup and vanilla for 3 minutes.
- Add the egg and beat until combined.
- In a separate bowl, whisk togetheer the flour, salt and baking soda.
- Reduce mixer speed to low and slowly add the flour mixture to the egg mixture.
- Add cranberries, pecans and rum.
- Spread batter in a butter or parchment lined 9 inch square baking pan.
- Bake for 35 minutes.
- Transfer pan to a wire rack.
- Cool for 10 minutes before slicing.
