Hakka Eggplant

  1. Mix first 8 ingredients untl well blended; set aside.
  2. Heat oil in large nonstick skillet on medium-high heat.
  3. Add eggplant, cook 10 min.
  4. or untlil tender and lightly browned, stirring frequently.
  5. Add onions; cook and stir 1 min.
  6. Stir in dressing mixture; cook and stir 30 sec.
  7. or until thickened.
