Artichoke Quiche From Lake Oswego Recipe

  1. Drain artichokes, cut in quarters.
  2. Beat Large eggs; add in Neufchatel, cottage cheese and buttermilk.
  3. Add in grated cheese.
  4. Stir in seasonings and crumbled bacon.
  5. Place artichokes in bottom of pie shell; pour cheese mix over artichokes.
  6. Bake at 375 for 50 to 60 min or possibly till toothpick comes out clean.
  7. Serves 4 to 6
