Blue Ribbon Tart Lemon Squares Recipe
- 1 c. sifted flour
- 1/4 c. powdered sugar
- 1/8 teaspoon salt
- 1/2 c. butter
- 1 c. sugar
- 2 tbsp. lemon juice
- 1/2 teaspoon baking pwdr
- 1/8 teaspoon salt
- 2 Large eggs, slightly beaten
- 1 teaspoon grated lemon rind
- 2 tbsp. flour
- Lemon Glaze (recipe follows)
- Combine 1 c. flour, powdered sugar and 1/8 tsp.
- salt.
- Cut butter in till mix is crumbly.
- Press mix into 7 x 11 x 1 1/2 inch baking dish (9 inch square also works).
- Bake at 350 degrees for 15 min.
- Combine sugar, 2 Tbsp.
- flour, baking pwdr, 1/8 tsp.
- Large eggs, lemon juice and lemon rind.
- Mix thoroughly.
- Spread proportionately over baked crust.
- Bake at 325 degrees for 25 min.
- Cold in pan on rack.
- Spread with Lemon Glaze.
