Oatmeal cinnamon cookies
- 214 grams soft butter or margarine I used flora light
- 200 grams sugar or 20g sweetner I used sweetner
- 200 grams brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 250 grams plain flour
- 1 tsp baking soda/bicarbonate of soda
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/2 tsp salt
- 400 grams Quick oats I used mornflake medium stoneground oatmeal for lower calories
- Pre heat oven 350/175
- Weigh together butter and both sugars in a big mixing bowl
- In another bowl weigh together flour, cinnamon, soda, baking powder & salt and set aside.
- In a container or bowl weigh out quick oats
- Cream butter and sugars till light and fluffy
- Beat in the eggs and vanilla extract
- Combine the flour mix until smooth
- Stir in the oats until mixed well.
- If you can form into balls form into 1-1/2" and put on UNGREASED baking tray 2" apart or services a teaspoon.
- I made 45 medium to large.
- Cook for 12-15 minutes until edges are golden brown
- Take out oven, cool a little then transfer to wire rack.
- I used liner 1st time and u greased tray 2nd.
- Continue until all mixture used.
- Enjoy.
