Red Rice

  1. In a skillet, cook bacon until crisp.
  2. Remove bacon to paper towels to drain.
  3. Discard all but 2 tb of drippings.
  4. Saute onion in drippings until tender.
  5. Add bacon and remaining ingredients.
  6. Cook, covered, over medium-low heat for 10 minutes.
  7. Spoon into a 1 1/2 qt baking dish.
  8. Cover and bake at 350F for 45 minutes or until rice is tender, stirring occasionally.
