robinmay's drunken honey rosemary pork chops
- 4 thick cut pork chops
- 1 tbsp honey
- 2 tbsp fresh lemon juice
- 4 sprigs fresh rosemary chopped
- 1/4 cup olive oil
- 3 clove garlic chopped
- 1 tbsp dijon mustard
- 1/2 tsp salt (or to taste)
- 1/2 tsp pepper (or to taste)
- 3/4 cup beer (I really enjoy a dark beer like Negra Modelo)
- whisk all ingredients together besides the chops and the beer
- put chops in a ziplock bag and poor marinade over the chops
- get as much air out of bag and close, then squish around covering chops
- let chops marinate a few hours
- take chops out and let sit for 15 min
- heat a pan w a little bit of oil to medium high heat
- sear porkchops really good getting a nice light brown crust on each side
- once chops are nicely seared (3 to 4 minutes each side) add beer to pan
- turn down heat and let chops simmer in beer until cooked through flipping occasionally
- once chops are finished remove from pan
- turn the heat back to medium high and reduce beer in the pan down a little (you may add a little dijon and some more rosemary to the beer sauce)
- reduce down to syrupy and thick
- pour over chops
