Simple Herbed Potato Salad
- 750g Pontiac potatoes, roughly chopped
- 1/2 cup reduced fat sour cream
- 1/3 cup KRAFT FREE Mayonnaise
- 4 spring onions
- 1 tablespoon capers, drained, finely chopped
- 1 cup mixed finely chopped herbs ( parsley, chives, basil and coriander)
- 1 piece prepared roast capsicum or 6 semi dried tomatoes, thinly sliced
- Cook potatoes in boiling water until tender, drain, and cool.
- Combine sour cream, mayonnaise, spring onions, capers and herbs.
- Toss potatoes and mayonnaise together, scatter over capsicum and serve.
