bacon & hash brown egg bake
- 1 lb bacon cut into 1inch pieces
- 1 medium onion chopped
- 1 packages (8 oz) sliced fresh mushrooms
- 2 tbsp dijon mustard
- 1/2 tsp salt
- 1/2 tsp pepper
- 3/4 cup milk
- 12 eggs
- 1 packages (2 lbs.) frozen hash browns
- 2 cup shredded cheddar cheese
- Cook Bacon & remove to small bowel.
- Refrigerate.
- Cook onion & mushrooms 4 minutes.
- Storing mustard, salt and pepper.
- Add eggs beat with wire whisk.
- Spray baking pan.
- Spread 1/2 of hash browns in baking dish.
- Spread onion mixture evenly on top.
- Sprinkle with 1cup of cheese and spread remaining hash browns on top.
- Pour egg mixture on top.
- Cover and refrigerate 8 hours.
- Heat oven to 325F.
- Uncover and bake 50 to 60 minutes or until thermometer reads 160F.
- Sprinkle cheese and Bacon then bake 3 to 5 minutes.
