Homemade Hush Puppies

  1. Mix all dry ingredients together (baking soda, flour, corn meal, sugar, salt, old bay seasoning, black pepper) in a bowl.
  2. Make sure the mixture is free of lumps.
  3. Melt the butter.
  4. Combine the dry mixture with the egg, milk, and butter in the bowl.
  5. (The batter must have a thick consistency; if it is milky add more flour)
  6. Mince the onion and add to the batter.
  7. Pour 2 cups of vegetable oil in a saucepan and heat.
  8. (TEST: if oil is hot, sprinkle with a pinch of flour.
  9. It must sizzle)
  10. Add a tablespoon of batter to the hot oil.
  11. (about four to six will fit)
  12. Let them cook for about five to eight minutes.
  13. Take them out and place on a paper towel or cookie rack to cool for about two minutes.
  14. Serve and enjoy!
