Holiday Carrots And Sweet Potatoes Recipe

  1. Bring 1 inch of lightly salted water to a boil in 2 qt saucepan.
  2. Add in carrots and sweet potato.
  3. Cook, covered, for 10 min.
  4. Drain.
  5. Grate rind from orange, then juice.
  6. Place both in buttered 1 1/2 qt casserole.
  7. Add in carrots and potato, 1 Tbsp.
  8. butter, pepper, and prunes; mix well.
  9. Drizzle the honey over the top; dot with remaining butter.
  10. Cover and bake in preheated 400 degree oven for 25 min.
