Acorn Squash Sage Shooter

  1. In a saucepan, heat oil and butter over medium heat.
  2. Add squash and garlic and 1 teaspoon salt and cook, stirring, until squash is caramelized, 10-15 minutes.
  3. Add broth and bring to a simmer.
  4. Reduce heat and boil gently until squash is falling apart, 15 minutes.
  5. Add syrup, sage and 1/2 t pepper.
  6. Transfer to a blender and puree until smooth.
  7. Variation: garnish with pesto oil.
