Acorn Squash Sage Shooter
- 1 tablespoon olive oil
- 1 teaspoon butter
- 3 cups diced acorn squash
- 2 garlic cloves
- salt and pepper
- 4 cups chicken broth or 4 cups vegetable broth
- 1 tablespoon maple syrup
- 1 tablespoon coarsely chopped fresh sage
- In a saucepan, heat oil and butter over medium heat.
- Add squash and garlic and 1 teaspoon salt and cook, stirring, until squash is caramelized, 10-15 minutes.
- Add broth and bring to a simmer.
- Reduce heat and boil gently until squash is falling apart, 15 minutes.
- Add syrup, sage and 1/2 t pepper.
- Transfer to a blender and puree until smooth.
- Variation: garnish with pesto oil.
