Burrito Pie
- 1/4 c. salad oil
- 4 (8-inch) flour tortillas
- 1/2 lb. hamburger
- 1 medium onion, chopped
- 1 (4 oz.) can chopped green chilies, drained
- 1 (8 oz.) can refried beans
- 1/3 taco sauce
- 2 c. Monterey Jack or Cheddar cheese
- 1 c. shredded lettuce
- 1 medium tomato, diced
- About 1 hour before serving, fry tortillas, one at a time, in salad oil about 30 seconds on each side until lightly browned and blistered.
- Drain on paper towels.
- Preheat oven to 350u0b0.
- In same skillet over high heat, fry hamburger and onion until done. Drain, then add green chilies, refried beans, taco sauce and salt. In 9-inch pie pan, place 1 tortilla; top with 1/4 of bean mixture and 1/4 cheese.
- Repeat 3 times.
- Bake for 30 minutes or until heated through.
- Top with lettuce, tomato and more taco sauce. Sour cream is also good with it.
