  1. Heat a pan over medium heat, and add your olive oil.
  2. When pan is warm, add spinach and garlic.
  3. Using tongs, toss the spinach and garlic regularly, until spinach wilts, about 23 minutes.
  4. Add a pinch of salt and pepper, and set aside.
  5. Top one slice of bread with the cheese, and then top that with sauteed spinach.
  6. Smear the top piece of bread with 1/2 tablespoon butter, and place on the sandwich, butter side up.
  7. Wipe your skillet clean with a paper towel, and return to medium heat.
  8. Add remaining 1/2 tablespoon butter to the pan and allow to melt.
  9. Place the sandwich in the pan (buttered bread side up) and move around until the whole bottom piece of the sandwich is coated with the melted butter.
  10. Cook the sandwich for 34 minutes, making sure that the bread isnt burning.
  11. Flip over, and cook 34 minutes more, until bread has browned and cheese is gooey.
