No Bake Energy Bites
- 1/2 cups Peanut Butter
- 1 cup Dry Oatmeal (I Use Quick Oats)
- 1/2 cups Dried Cranberries
- 1/2 cups Dried Blue Berries
- 1/2 cups Honey
- 23 cups Flaked Coconut
- 1/2 cups Flax Seed
- 1/2 cups Chia Seeds
- 1 teaspoon Vanilla Extract
- Stir all ingredients together in a medium bowl until thoroughly mixed.
- Let chill in the refrigerator for half an hour.
- Once chilled, roll into balls of whatever size you would like.
- Store in an airtight container and keep refrigerated for up to 1 week.
- Some folks use chocolate chips, but I use dried fruit as my husband is diabetic.
- Makes about 20-25 balls.
