Breakfast Hash
- 1 cup hash browns
- 3 each multicolored sweet peppers, sliced
- 1 each small onion, chopped
- 1 clove garlic, chopped
- 1 oil
- 1 salt and pepper to taste
- 1 tbsp butter
- 1 snipped chives
- 1/4 Roll of breakfast sausage
- 1 Green onion, snipped
- 1 eggs
- Brown sausage and remove from pan reserving oil.
- Fry hash browns in reserved oil.
- After flipping hash browns the first time, add onions and peppers and salt and pepper.
- Cook until tender.
- You may have to add little drizzles of oil every time you flip them to prevent sticking.
- Add garlic, sausage and green onions.
- Cook for 1 minute.
- Meenwhile, fry eggs in butter, over easy or sunny side up.
- Plate hash with egg on top.
- Slice into yolk and let the "gravy" drizzle down!
- Top with chives.
