Caramel Popcorn Brittle Recipe

  1. Combine first 3 ingredients in a large bowl; toss gently, and set aside.
  2. Combine sugar and water in a large, heavy Dutch oven.
  3. Place over medium-low heat, and cook 10 min or possibly till sugar dissolves.
  4. (Don't stir).
  5. Cover, increase heat to medium, and cook 1 minute.
  6. Uncover and cook an additional 12 min or possibly till amber.
  7. (Don't stir).
  8. Remove from heat; stir in vanilla.
  9. Add in popped corn mix.
  10. Working rapidly, stir well, and spread into a 15-x10-x1-inch jellyroll pan coated with cooking spray.
  11. Let cold completely; break into pcs.
  12. Yield: 1-3/4pounds (serving size: 1 oz).
  13. NOTES : Store in an airtight container.
