Malva Pudding

  1. Preheat the oven to 180C
  2. Beat the castor sugar and eggs together until light and fluffy
  3. Add the smooth apricot jam and mix well.
  4. Sift the flour, bicarbonate of soda and salt together.
  5. In a saucepan, melt the butter and add the the vinegar and milk.
  6. Fold the flour and milk mixtures alternately into the egg mixture.
  7. Pour into a medium to large greased baking dish and bake for 40-45 minutes or until a knife inserted into the centre comes out clean.
  8. Place all the ingredients for the sauce into a saucepan and stir over moderate heat until the butter has melted and the sugar dissolved.
  9. Pour over the hot pudding as soon as it comes out of the oven.
  10. Pierce the pudding several times with a skewer so that the sauce can be absorbed.
  11. Serve with custard or cream.
