Amanda's Blueberry Cobbler
- 1 13 cups cooking oil
- 6 tablespoons milk
- 1 cup sugar
- 2 tablespoons sugar (meant to be used on the topping not in the dough)
- 4 cups flour
- 2 teaspoons salt
- 2 (21 ounce) cans blueberry pie filling (any flavored filling will do as long as it is sweetened)
- Whip oil and milk together with a fork in a bowl.
- Combine flour, sugar and salt in another bowl.
- Add oil/milk mixture to the flour mixture and blend well with a fork.
- Press 2/3 of the mixture into a 9x13 pan and set the rest of the mixture aside.
- Pour pie filling on top of crust.
- Crumble remainder of dough on top of pie filling.
- Sprinkle 2 tbs of sugar on top
- Bake in the oven for 30 minutes at 400 Degrees.
- Place a piece of wax paper on top of the dish (do not seal) while it is cooling and let it cool for at least one hour before serving so it can set up.
- If not, it will become soggy.
- Vanilla ice cream is a nice addition to it if you like!
