Fried Potatoes with Onions

  1. Peel potatoes and dice in 1/2 inch cubes ( larger or smaller to your liking )
  2. Peel and slice onion.
  3. Toss with potatoes.
  4. Pour oil or bacon grease, salt, pepper and paprika over potatoes and onions.
  5. Toss to coat well and making sure all potatoes are coated.
  6. Heat skillet or electric skillet to 325.
  7. When heated, add butter and melt.
  8. Stir.
  9. Add potatoes, onions and oil used to coat mixture to melted butter.
  10. Cook covered on medium heat turning after about 10 minutes.
  11. This will give you a crispy potato.
  12. Turn potatoes and continue cooking until tender.
  13. Try to keep from to much stirring, your potatoes will turn to mush.
  14. I learned the hard way.
  15. :)
  16. Add more seasonings if needed.
  17. Drain cooked potatoes on paper towels and keep warm in 200F oven if needed.
