Easy & Simple Baked Chocolate Pudding

  1. Put the double cream, milk, and sugar in a heat proof container with a spout.
  2. Heat in a 500 W microwave for approx.
  3. 3 minutes.
  4. Mix well.
  5. Break the chocolate into small pieces.
  6. Add to the milk mixture and mix well while melting the chocolate in the residual heat.
  7. Add the vanilla oil, mix lightly and cool a little.
  8. In a different bowl, beat the eggs together and add into Step 2 little by little, stirring well after each addition.
  9. Preheat the oven to 140C.
  10. Begin to boil water for the water bath.
  11. Strain Step 3 into ramekins, mugs or other small heatproof containers.
  12. Place the ramekins on a baking tray and fill half of the tray with boiling water.
  13. Steam cook the puddings for 50 minutes at 140C.
  14. Check with a bamboo skewer, and if it comes out clean, they are done.
  15. Chill in the fridge and enjoy.
  16. For Valentine's Day, draw on the pudding with a white chocolate decorating pen (not listed), or sprinkle with sliced almonds (not listed).
