Streusel Topped Pumpkin Pie

  1. Fir the crust : in a bowl whisk together flour, sugar, salt.
  2. Add cold butter & shortening.
  3. Using a fork cut butter into flour until mixture looks like coarse crumbs.
  4. Drizzle ice water into mixture 1 Tbsp.
  5. At a time until it starts to come together.
  6. Do not overmix.
  7. Press the dough together.
  8. Wrap into plastic wrap.
  9. Shape into 4 -5" round.
  10. Chill 30 minutes.
  11. Dust work surface with flour.
  12. Roll into a 12" round.
  13. Carefully transfer dough into a 9" pie plate.
  14. Trim & flute.
  15. Preheat oven to 375 degrees .
  16. Chill dough 10 minutes.
  17. In a mixing bowl.
  18. Mix sugar & cornstarch , cream cheese, spices using a mixer .
  19. Mix until smooth.
  20. Scrape down.
  21. Add eggs, br.
  22. Sugar , salt.
  23. Mix together.
  24. Blend in half & half & pumpkin & vanilla.
  25. Pour mixturw into pie crust.
  26. Bake 35 minutes.
  27. Meanwhile make the crumble.
  28. In a mixing bowl whisk together flour, sugar, br.
  29. Sugar , cinnamon, salt.
  30. Mix together.
  31. Add cold butter use a fork to cut butter into mixture intil it resembles small crimbs.
  32. Stir in pecans.After 35 minutes.
  33. Remove from oven.
  34. Sprinkle topping on top of pie.
  35. Reduce oven to 350 degrees .
  36. Bake another 25-35 minutes.
  37. Until toothpick comes out clean cool completely.
  38. Then chill 1-2 hours.
  39. Keep refrigerated.
