Martha's Roasted Garlic Vinaigrette

  1. Make the vinaigrette: Preheat oven to 350 degrees.
  2. Drizzle garlic with 1 teaspoon oil.
  3. Wrap in parchment, then in foil.
  4. Bake until soft, about 30 minutes.
  5. Squeeze garlic from skins.
  6. Mash until smooth.
  7. Whisk together the remaining ingredients with the roasted garlic and remaining oil.
