Avenue Bistro Austrian Apple Pancake Recipe
- 6 tsp sweet butter
- 1 x Granny Smith apple, peeled, cored, seeded, cut into 8 wedges
- 1 tsp lemon juice cinnamon
- 3 x Large eggs
- 2 tsp sugar
- 1 pch salt
- 4 ounce all-purpose flour
- 4 ounce whole lowfat milk Garnish Powdered sugar to taste
- 2 ounce maple syrup, hot, Northeastern grade B quality
- Heat two Tbsp.
- of the butter and set aside.
- Combine Large eggs, sugar, salt, flour, lowfat milk and melted butter in a bowl, mix well till smooth and pass through a sieve.
- Heat the remaining 4 Tbsp.
- of butter in a 10-inch saute/fry pan.
- When the butter starts to brown lightly add in apple, cinnamon and lemon juice.
- Saute/fry mix till apples are cooked halfway and golden.
- Pour pancake batter over apples.
- Bake pancake in a 550 degrees F oven.
- Apple pancake takes about 12-15 min to cook.
- The pancake should souffle up around the rim of the saute/fry pan and should turn a nice golden.
- Serve with hot syrup and sprinkle with powdered sugar.
