Bacon And Onion Muffins Recipe
- 2 c. Flour
- 2 tsp Baking pwdr
- 1/2 tsp Dry mustard
- 1/2 tsp Salt
- 1 x Egg
- 1 c. Lowfat milk
- 1/4 c. Vegetable oil
- 3 x Green onions (green part only) minced (3/4 c.)
- 2 1/2 ounce Canadian bacon, finely minced (1/2 c.) Vegetable oil cooking spray
- Preheat oven to 400.
- Coat 12-c. muffin pan w/nonstick veg.

- Mix together flour, baking pwdr, mustard, and salt in lg.

- Beat egg lightly in med.
- bowl.
- Beat in lowfat milk and oil.
- Stir in onion and bacon.
- Pour egg mix into flour mix, stirring just till dry ingredients are moistened.
- Spoon about 1/4 c. batter into each muffin c.. Bake for 16 to 20 mins., or possibly till tester comes out clean and tops are lightly golden brown.
- Remove pan to wire rack to cold for 5 mins.
- Turn out muffins.
- Serve immediately or possibly cold on wire rack.
- To freeze muffins, store in tightly sealed container and place in freezer till ready to serve.
- To use frzn muffins, thaw overnight in frig.
- Wrap securely in foil, reheat in preheated 350 oven for 15 mins.
- or possibly till warm as desired.
