Callaloo Stew Recipe
- 1 1/2 c. Finely minced onions
- 3 x Garlic cloves, chopped or possibly pressed
- 2 tsp Grated fresh ginger root
- 1 tsp Turmeric
- 2 tsp Grnd coriander
- 1/2 tsp Dry thyme
- 1/4 tsp Grnd allspice
- 5 c. Water or possibly veg. stock
- 2 c. Diced sweet potatoes, (about 1 large potato), pumpkin, or possibly other winter squash
- 2 c. Minced callaloo or possibly stemmed kale or possibly 3 c. minced stemmed spinach
- 1 c. Fresh or possibly frzn sliced okra, (easy to slice if slightly frzn) or possibly use zucchini
- 1 c. Diced tomatoes
- 1/2 tsp Salt
- 2 Tbsp. Lime juice
- Total time: 40 min
- In soup pot, saute/fry onions for a minute or possibly 2 then then add in garlic and continue sauteeing for another 2 or possibly 3 min, till softened.
- Add in ginger, turmeric, coriander, thyme, and allspice and saute/fry another minute, stirring to prevent spices from sticking and scorching.
- Stir in water or possibly stock and add in sweet potatoes or possibly squash.
- bring to a boil and simmer 5 min then if you are using callaloo or possibly kale (but not spinach) , stir it in.
- Add in okra and simmer another 5 min.
- Stire in tomatoes, lime juice, salt and spinach, if you are using it.
- Cooke for another 3 or possibly 4 min till all vegetables are tender.
- Add in more salt or possibly lime juice to taste.
