Canadian Bacon & Ranch Benedict

  1. Beat eggs and 1/4 cup of the dressing with wire whisk until well blended; set aside.
  2. Spray medium skillet with cooking spray; heat on medium heat.
  3. Add egg mixture.
  4. Cook 3 min.
  5. or until eggs begin to set; stir.
  6. Cook an additional 2 min.
  7. or until eggs are thickened and no visible liquid remains, stirring occasionally.
  8. (Do not overstir.)
  9. Heat Canadian bacon as directed on package.
  10. Meanwhile, combine remaining 1/4 cup dressing and the milk in small microwaveable bowl.
  11. Microwave on HIGH 20 sec.
  12. or until heated through.
  13. Cut Canadian bacon slices in half.
  14. Place muffin halves, cut-sides up, on serving platter.
  15. Top each with 3 Canadian bacon slices.
  16. Cover evenly with the egg mixture, dressing mixture, tomatoes and parsley.
