Onion-Basil Grilled Veggies
- 3 ears corn, each cut into 3 pieces
- 1 lb medium red potatoes, quartered
- 1 cup baby carrots
- 1 green bell pepper, cut in 1 inch pieces
- 1 large red bell pepper, cut in 1 inch pieces
- 1 (1 1/4 ounce) envelope onion soup mix
- 3 tablespoons minced fresh basil (or 1 tbsp dried)
- 1 tablespoon olive oil
- 14 teaspoon pepper
- 1 tablespoon butter
- In a large bowl combine the first 9 ingredients.
- Toss to coat.
- Place on a double thickness of heavy duty aluminum foil.
- Piece should be about 28"x18" big.
- Dot with butter.
- Fold foil around the veggies and seal tightly.
- Grill, covered, over medium heat for 25-30 minutes, or until potatoes are tender.
- Turn once while grilling.
