Quick Veggie Medley

  1. Heat oil in large saute pan.
  2. Add veggies.
  3. Season.
  4. Cook at medium heat until veggies are caramelized and tender.
  5. Adjust seasoning.
  6. Variations; citrus zest, fresh or dried herbs, sherry, veggie stock, mustard, parika, smoked paprika, saffron, potatoes, tomatoes, other squashes or peppers, applewood seasoning, beans, corn, carrot, broccoli
  7. Also try white wine, vodka, caramelized onions, shallots

zucchini, dice, bell pepper, red onion, serrano pepper, stalks, garlic, salt
