Mom's Bruschetta Meatloaf

  1. Heat oven to 375F.
  2. Mix tomatoes and stuffing mix.
  3. Reserve half for later use.
  4. Add meat and egg to remaining stuffing mixture; mix well.
  5. Press onto bottom of 8-inch square baking dish.
  6. Combine reserved stuffing mixture and onions; spread over meat mixture.
  7. Cover.
  8. Bake 45 min.
  9. ; top with cheese.
  10. Bake, uncovered, 10 min.
  11. or until meatloaf is done (160 degrees F).
