Roasted Veggies
- 2 red bell peppers, chopped in cubes
- 12 red onion, chopped
- 10 peeled baby carrots, cut in half
- 2 garlic cloves, diced
- 14 teaspoon salt
- 1 tablespoon olive oil
- 14 teaspoon ground black pepper
- Preheat oven to 375 degrees.
- Mix all ingredients in a large bowl until veggies are coated.
- Place in one layer in baking or roasting pan.
- Bake in oven for 25-30 minutes, turning half way through.
- Enjoy immediately.
- Add additional seasoning if desired.
