Farmhouse Supper
- 3 potatoes
- 1 onion
- 1 slice bacon
- 12 pepper
- 1 ounce cheese
- little oil
- knob butter
- 1 egg
- Slice and dice the potatoes.
- Peel and chop the onion.
- De-rind and dice the bacon.
- Core and chop the pepper.
- Grate the cheese.
- Heat the oil in a frying pan, add the bacon, and fry gently for 3-4 minutes.
- Remove the bacon from the pan and save on a saucer.
- Put the potatoes, onion and green pepper into the hot fat in the pan, and continue to fry gently for 5-10 minutes, until lightly browned.
- Mix the bacon with the vegetables and place in an ovenproof dish.
- Melt the butter in the pan and fry the eggs.
- Carefully put the eggs on top of the vegetables and bacon.
- Cover with the grated cheese, and brown for a few minutes under a hot grill, until the cheese is bubbly.
- Serve at once.
