Farmhouse Supper

  1. Slice and dice the potatoes.
  2. Peel and chop the onion.
  3. De-rind and dice the bacon.
  4. Core and chop the pepper.
  5. Grate the cheese.
  6. Heat the oil in a frying pan, add the bacon, and fry gently for 3-4 minutes.
  7. Remove the bacon from the pan and save on a saucer.
  8. Put the potatoes, onion and green pepper into the hot fat in the pan, and continue to fry gently for 5-10 minutes, until lightly browned.
  9. Mix the bacon with the vegetables and place in an ovenproof dish.
  10. Melt the butter in the pan and fry the eggs.
  11. Carefully put the eggs on top of the vegetables and bacon.
  12. Cover with the grated cheese, and brown for a few minutes under a hot grill, until the cheese is bubbly.
  13. Serve at once.
