Classic Meatless Picadillo
- 1/4 medium red pepper
- 1/4 large yellow pepper
- 1/4 medium green pepper
- 2 tsp. canola oil
- 1/4 cup black beans, cooked or canned without added salt
- 1/4 cup red kidney beans cooked or canned without added salt
- 1/2 cup reduced sodium tomato sauce
- 1/2 cup canned stewed tomatoes, cooked or canned without added salt
- 1/2 cup BOCA Meatless Ground Burger
- 2 Tbsp. green chiles
- 1 tsp. chili powder
- 1/4 tsp. ground cumin
- 1/2 cup hot cooked rice
- 6 oz. fat-free milk
- Chop peppers.
- Cook and stir peppers and oil in large saucepan on medium-high heat for 3 minutes.
- Add all remaining ingredients.
- Bring to boil; reduce heat.
- Simmer 30 minutes, stirring occasionally.
- Serve with hot cooked rice and a glass of milk.
