Classic Meatless Picadillo

  1. Chop peppers.
  2. Cook and stir peppers and oil in large saucepan on medium-high heat for 3 minutes.
  3. Add all remaining ingredients.
  4. Bring to boil; reduce heat.
  5. Simmer 30 minutes, stirring occasionally.
  6. Serve with hot cooked rice and a glass of milk.
