Tomato & Beef Skillet
- 1 lb. boneless beef sirloin steak, cut into thin strips Whole Foods 1 lb For $7.99 thru 02/09
- 1 Tbsp. oil
- 1-1/2 cups water
- 2 Tbsp. fresh chopped rosemary or 2 tsp. dried rosemary
- Grated peel and juice from 1/2 of a lemon Safeway 4 ct For $5.00 thru 02/09
- 1-1/2 cups instant white rice, uncooked
- 2 carrots, shredded
- 2 cups chopped tomatoes King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
- Cook and stir meat in oil in large skillet on high heat 2 min.
- or until browned.
- Add water, rosemary, lemon peel and juice.
- Bring to boil.
- Stir in rice and carrots.
- Bring to boil; cover.
- Reduce heat to low; simmer 2 min.
- Remove from heat.
- Let stand 5 min.
- Top with tomatoes and cheese.
